Preparation
In a bowl, mix all the sauce ingredients (broth, soy sauce, oyster sauce, corn starch, sugar, cayenne pepper, and salt) until the sugar and salt are completely dissolved. Set aside.
Prepare the vegetables: slice the spring onions, tear the oyster mushrooms into smaller pieces, cut the bell peppers into thin strips. Cut the red onion into thin wedges, and the celery stalks into thin slices. Halve the leek lengthwise, then cut into thin strips. Slice the carrots thinly. Finely chop the garlic and ginger.
Cooking
Heat a wok or a large, high-sided pan over the highest heat until it just begins to smoke.
Chef's tip
The pan must be truly scorching hot, otherwise the vegetables will steam instead of fry, and they will lose their crispy texture.
It is important that all ingredients are pre-cut and prepared, as the cooking process is very fast and cannot be paused.
Use a large, non-stick pan or an authentic Asian wok for best results.
