Preparation method
Prepare the vegetable broth: if using broth concentrate, dissolve it in 400 ml of hot water. Keep warm.
Heat the olive oil in a pan, then add the mushroom mixture. Sauté over medium heat for about 3 minutes until the mushrooms soften and become fragrant.
Add the risotto rice to the mushrooms, then pour in the warm broth. Mix thoroughly.
Chef's tip
Risotto is most delicious if a little cold butter is stirred in before serving for an even creamier texture.
