Preheat the oven to 235 °C and line a baking tray with baking paper. Break the cauliflower into smaller florets, wash them, and dry them thoroughly.
In a bowl, mix the flour, sweet paprika, garlic granules, a pinch of salt, and pepper. Gradually add water and mix into a thick, lump-free batter. Toss the cauliflower florets in the batter until they are evenly coated everywhere.
Arrange the cauliflower on the baking tray so they don't touch each other. Bake in the preheated oven for 25 minutes. Halfway through the baking time, turn the florets to ensure they crisp up on all sides.
Chef's tip
If you want an even crispier result, you can mix a little panko breadcrumbs into the batter.
