Ingredients

  • 250 g all-purpose wheat flour
  • 5 pcs eggs
  • 1 pinch ground nutmeg
  • 1 pinch pepper
  • 1 pinch salt and salt for the cooking water
  • 200 g Bergkäse, Emmental or Raclette cheese
  • 40 g butter
  • 80 g red onion
  • fresh chives for garnish

    Bring water to a boil in a large pot and salt it generously (approx. 2 tablespoons of salt for 4 liters of water).

    In a bowl, mix the flour, eggs, nutmeg, salt, and pepper until you get a smooth, elastic dough.

    Using a spaetzle maker or spaetzle press, drop the dough into the boiling water in several batches. Cook each batch for approx. 2 minutes, until they float to the surface.

    Remove the spaetzle with a slotted spoon and place them in a bowl.

    Finely chop the red onion and coarsely grate the cheese.

    In a large pan, melt the butter over medium heat and sauté the onion until golden brown.

    Add the spaetzle to the onion and sauté, stirring occasionally, until golden in places. Then remove from heat.

    Stir in the grated cheese, sprinkle with chopped chives, and serve immediately while the cheese is gooey and hot.
