Ingredients
- 200 g ginger
- 2 pcs lemon
- 75 g golden brown sugar
- 100 g muscovado sugar
- 100 g ice
- 1000 ml soda water
Steps
- 1Place the ginger in a saucepan with the lemon zest, both types of sugar, and 500 ml of water. Cook over low heat, stirring until the sugar dissolves. Then increase the heat to medium and cook for another 15-20 minutes, until the water evaporates and it becomes syrupy. Remove from heat and let it cool completely.
- 2Strain the syrup into a pitcher through a fine-mesh sieve. (If desired, the syrup can be transferred to a small sterilized bottle or jar and stored in the refrigerator for up to two weeks.) Pour in the lemon juice, fill with ice, and top up with soda water.
