
Onion Flatbread with Spelt Dough

Preparation method
Peel the onion and cut it into thin slices. Cut the ham into thin strips. In a large pan, heat 2 tablespoons of olive oil over medium heat, then add the onion, ham, and thyme. Reduce the heat and sauté over low heat, stirring occasionally, for 9-10 minutes.
Meanwhile, preheat the oven to 180-185 °C and prepare a baking tray (approx. 30x40 cm) lined with baking paper. In a large bowl, mix 30 g Greek yogurt, 200 g spelt flour, 130 ml water, baking powder, salt, and pepper. Knead into an elastic, non-sticky dough.
Once the onion mixture is ready, turn off the heat. Flour a work surface with the remaining 20 g of flour, roll out the dough to about 1 cm thickness, then place it on the baking tray. Spread the remaining 70 g of yogurt over the dough, and evenly distribute the onion and ham mixture on top. Bake for 30-35 minutes at 180-185 °C.
Chef's tip
Before spreading the yogurt on the dough, you can mix in 2 cloves of crushed garlic and fresh thyme for a more intense flavor.
