Preheat the oven to 190 °C and line a muffin tin with paper liners.

In a large bowl, mash the banana with a fork. Add the cooked rice, eggs, starch, almond drink, baking powder, vanilla extract, and grated lemon zest, then mix thoroughly.

Spoon the batter into the paper liners, filling them about halfway or two-thirds full. Bake the muffins at 180–190 °C for 20–25 minutes, until golden brown.
