- 200 g fine wheat flour
- 200 ml semi-skimmed milk
- 2 eggs
- 200 g Gouda cheese
- 200 g sliced ham
- 8 g baking powder
- 200 g shallots
- 10 g fresh basil
- 15 ml olive oil
- 15 g cane sugar
- 1 g ground coriander
- 1 g salt
Preheat the oven to 180 degrees Celsius (top and bottom heat). Finely chop the shallots, dice the ham, and grate the Gouda cheese on a large-holed grater. Heat the olive oil in a pan and sauté the shallots until translucent. Add half of the ham and the cane sugar, then caramelize over high heat for a few minutes.
In a large bowl, mix the flour with the baking powder. Add the milk and eggs, and mix thoroughly. Then fold in the grated cheese, the other half of the ham, and the chopped basil. Season with salt and ground coriander.
Line the muffin tins with paper liners, fill them 3/4 full with the batter, and sprinkle the tops with the caramelized shallot and ham mixture. Bake in the oven for 35-40 minutes. Check if the dough is cooked through with a skewer test.
Chef's tip
The batter can also be baked in an oiled Bundt cake pan. In this case, bake at 180 degrees Celsius for 45-50 minutes.
