Preparation method
Preheat the oven to 175–180 °C and line a baking sheet with parchment paper.
In a large bowl, mash the peeled bananas with a fork. Chop the dark chocolate into small pieces and add it to the bananas. Add the oatmeal, egg, honey, cinnamon, baking soda, vanilla extract, cornstarch, and a pinch of salt, then mix everything thoroughly.
Using a spoon, form the mixture into discs about 5 cm in diameter on the baking sheet. The dough will be enough for approximately 12 cookies. Bake the cookies for 20–22 minutes in the preheated oven.
Chef's tip
The cookies will still be soft when you take them out of the oven, but they will achieve their perfect consistency as they cool.
