Preparing the syrup
Peel the ginger and cut it into thin slices.
In a saucepan, combine 500 ml of water, the sugar, and the lemon zest, then bring to a boil over medium heat. Cook until a syrupy consistency is achieved. Then add the sliced ginger.
Cook for another 2 minutes, then let the ginger syrup cool to room temperature.
Chef's tip
You can also add lemon slices and a few slices of fresh ginger to the glass for a more appealing presentation.
If you strain the ginger syrup, you can store it in a sealed bottle in the refrigerator for a longer period.
