ASSEMBLY AND SERVING

Place the cheese on the cooled pancake (not all the way to the edge), then add the mortadella, and finally the tomatoes, arugula, or a little fresh cream cheese. Combinations can be varied according to taste. It is important that the cheese is at the bottom to 'seal' the pancake when frying.

You can prepare the pancakes in advance and only fill and fry them just before serving.
