- 20 g fresh mint
- 100 g granulated sugar
- 216 g lemon juice
- 750 ml sparkling mineral water
Place the washed mint leaves in a small saucepan, add the sugar and 150 ml of water. Bring to a boil and cook until the sugar is completely dissolved. Then let the syrup cool.
In a large pitcher, mix the mint syrup with the lemon juice and a large handful of ice. Top up with sparkling mineral water. Taste and add more lemon juice if necessary. When serving, you can garnish with lemon zest and fresh mint sprigs.
Chef's tip
For an even more intense flavor, gently muddle the mint leaves at the bottom of the pitcher before adding the water.
