Preparation method
In a large pot, bring salted water to a boil for cooking the pasta. Cook the penne pasta according to the instructions on the package, then drain it.
Meanwhile, in a large pan, heat the olive oil over medium heat. When the oil is hot, add the chopped red onion and whole garlic cloves. Sauté, stirring occasionally, for 4-5 minutes over medium heat.
Cut the bell pepper into larger, approximately 2x2 cm cubes. Add to the pan and sauté for another 5-6 minutes. Then pour in the vegetable broth, add the chopped tomatoes and oregano. Cook over medium heat for 12-13 minutes, until the bell pepper is completely soft.
Chef's tip
When serving, garnish the plates with fresh basil leaves and drizzle with a little high-quality olive oil. You can also sprinkle grated Parmesan cheese on top.
