Preparation method

Preheat the oven to 185 °C. Peel the raw beetroot and cut it into smaller pieces. Place it in aluminum foil, drizzle with one tablespoon of oil, mix, then wrap tightly. Cut off the top of the garlic head to expose the cloves, drizzle with one tablespoon of oil, and also wrap in aluminum foil.

Place both packages on a baking tray and bake in the preheated oven for about 50-60 minutes, or until the beetroot is completely soft. Let the roasted beetroot and garlic cool slightly, and in the meantime, bring salted water to a boil for the pasta.

When the water boils, add the pasta and cook according to the instructions on the package. Place the roasted, soft beetroot in a blender with the feta cheese, parsley, a ladleful of pasta cooking water, and the roasted garlic cloves (squeeze them out of their skins). Season with salt and pepper, and blend into a smooth, pink sauce. If it's too thick, add a little more cooking water.

Use bow-tie (farfalle) pasta for an even more stylish appearance!
