Preparation method

Cook the pasta in plenty of salted water (with 40 g salt) until al dente. Before draining, set aside 100 ml of the cooking water.

Cut the meat into 0.5 cm thick slices, then chop into 0.5×0.5 cm cubes.

Dice the bacon, mix it with the meat, the picked thyme, and a pinch of salt. Mix thoroughly.
Chef's tip
Instead of pork tenderloin, you can also use boneless pork loin; the result will be just as delicious.
