Preparation and Cooking
In a large pot, bring water to a boil for the pasta, season it well with salt. Meanwhile, peel and finely chop the red onion. Separate the broccoli into florets, peel the stem and cut it into small cubes.
Once the water boils, add the pasta and cook for the time indicated on the package (approx. 10-12 minutes). 5 minutes before the end of the cooking time, add the broccoli florets to the pasta. When done, drain and rinse with cold water to preserve its color and prevent further cooking.
Preparing the Sauce
Prepare the creamy sauce: in a blender or a tall container, combine the drained white beans, lemon juice, 2 tablespoons of olive oil, nutritional yeast, onion granules, vegetable broth, salt, and pepper. Add the peeled garlic, then blend until completely smooth with an immersion blender.
Chef's tip
When serving, you can drizzle with a little fresh lemon juice and garnish with fresh basil leaves for an even fresher taste.
