Kifli Kukták
A dél-olasz konyha egyik legkedveltebb, lélekmelengető fogása: egyetlen edényben főtt, selymesen sűrű tészta apróra kockázott burgonyával, gazdag zöldségalappal, illatos rozmaringgal és olvadó parmezánnal. Egyszerű, kiadós és alig 25 perc alatt az asztalra varázsolható!
Preparation method
The aromatic base and sautéing the potatoes
Clean the onion, carrot, and celery stalk, then finely dice them uniformly (classic Italian soffritto). Mince the garlic, peel the potatoes, and cut them into 1.5 cm cubes.
Heat 2 tablespoons of extra virgin olive oil in a heavy-bottomed pot. Add the diced onion, carrot, and celery, then sauté over medium heat for 4-5 minutes until softened and sweet-smelling.
Add the minced garlic, tomato paste, and the fresh rosemary sprig. Stir for 1-2 minutes until the tomato paste takes on a deep red color and a rich aroma.
Chef's tip
The Neapolitan secret: cooking the pasta and potatoes together in one pot guarantees an exceptionally creamy texture, as the released starch remains in the broth and forms a silky emulsion.
If you want an even richer dish, you can also stir in some diced smoked provola or scamorza cheese along with the Parmesan at the very end, which melts and stretches wonderfully into strings in the hot pasta.
