Preparation method
First, take a large pot, pour in enough water for cooking the pasta, salt it, and bring it to a boil over high heat. Once the water starts boiling, add the pasta and cook for 17–18 minutes over medium heat.
Meanwhile, prepare the zucchini sauce: Peel and finely chop the onion and garlic. Cut the zucchini into smaller cubes. Then, take a large pan and heat the olive oil in it over medium heat. Once the oil is hot, add the chopped onion, garlic, and zucchini cubes to the pan, then sauté for 4–5 minutes over medium heat. After that, pour in the water, season with salt and pepper, and cook for 7–8 minutes over medium heat.
Drain the cooked pasta. Grate the Parmesan finely. Once the zucchini has softened in the pan, transfer the mixture to a high-sided blender container, pour in the cooking cream, add the grated Parmesan and fresh basil, then blend until smooth with an immersion blender. Pour the blended sauce back into the pan, add the drained pasta, and season with salt and pepper.
Chef's tip
Before serving, sprinkle the portions with finely grated Parmesan and garnish with a few fresh basil leaves.
