
Spaghetti with spinach pesto and roasted chicken breast

Preparation method
In a large pot, bring a generous amount of water to a boil for cooking the spaghetti. Meanwhile, clean the chicken breasts, then season with salt and pepper. When the water starts boiling, salt it, add the spaghetti, and cook over medium heat for 14-15 minutes (or according to package directions).
Meanwhile, heat 2 tablespoons of oil in a large pan. Add the chicken breasts and cook them over medium heat until golden brown on both sides, about 7-9 minutes.
While the meat is cooking, prepare the pesto: Peel the garlic cloves and place them in a tall blender jar. Add all other pesto ingredients (baby spinach, olive oil, water, cashews, Parmesan) and blend until smooth with an immersion blender.
Chef's tip
Spaghetti is also an excellent, quick meat-free dinner without chicken.
