
Green Avocado Pasta

Preparation method
Bring a large pot of salted water to a boil for the pasta. When the water is boiling rapidly, add the whole wheat penne pasta and cook according to package directions until al dente.
While the pasta is cooking, prepare the sauce. Cut the avocado in half, remove the pit, and scoop the flesh into a food processor. Add the green peas, baby spinach, fresh parsley, lemon juice, finely grated Parmesan, chili flakes, and milk.
Blend everything until completely smooth and creamy. Season the finished sauce with salt and pepper to taste. Important: do not heat the sauce, as the avocado and cheese may change its color and texture.
Chef's tip
Do not cook or reheat the sauce, as the avocado may turn bitter and the Parmesan may clump. The warm pasta will be just enough to warm the sauce for serving.
