Boil 3 litres of water in a pot and salt it with 3 tablespoons of salt. Once the water starts boiling, add the pasta, let it boil for 1-2 minutes, then stir gently. Cook the pasta according to the package instructions, then drain it, but set aside 100 ml of the cooking water.

Pour the pesto into a cold bowl or pan and add the cooked pasta and 2-3 tablespoons of the pasta cooking water. Mix them together and serve onto a plate.

Sprinkle with a handful of toasted pine nuts and grate some Parmesan or Pecorino cheese on top.
Chef's tip
You can also make a larger batch of pesto; it will keep in a sealed container in the refrigerator.
