Pesto Pasta

Bring 3 liters of water to a boil in a pot and season with 3 tablespoons of salt. As soon as the water starts to boil, add the pasta, let it boil for 1-2 minutes, then stir gently. Cook the pasta according to the package instructions, then drain, but set aside 100 ml of the cooking water.

Pour the pesto into a cold bowl or pan, add the cooked pasta and 2-3 tablespoons of the pasta cooking water. Toss together and serve on a plate.

Sprinkle with a handful of toasted pine nuts and grate some Parmesan or Pecorino over top.
