INGREDIENTS FOR THE PASTA
- 90 g pasta
- 1 teaspoon pine nuts
- Finely grated Parmesan or Pecorino cheese for sprinkling

INGREDIENTS FOR HOMEMADE PESTO
- 50 g basil leaves
- 1 teaspoon grated medium-hard Pecorino
- 1 tablespoon pine nuts
- ½ clove garlic
- 1 teaspoon grated Parmesan
- 50 ml extra virgin olive oil
- A pinch of freshly ground pepper
- A pinch of salt

PASTA PREPARATION
- 1Boil 3 litres of water in a pot and salt it with 3 tablespoons of salt. Once the water starts boiling, add the pasta, let it boil for 1-2 minutes, then stir gently. Cook the pasta according to the package instructions, then drain it, but set aside 100 ml of the cooking water.
- 2Pour the pesto into a cold bowl or pan and add the cooked pasta and 2-3 tablespoons of the pasta cooking water. Mix them together and serve onto a plate.
- 3Sprinkle with a handful of toasted pine nuts and grate some Parmesan or Pecorino cheese on top.
PESTO PREPARATION
- 1Toast the pine nuts over medium heat until golden brown, then transfer them to a cold bowl.
- 2Chop the basil.
- 3In a tall, narrow container, combine the chopped basil, garlic, one tablespoon of pine nuts, Parmesan, Pecorino, and olive oil, then blend with an immersion blender. Add salt and pepper to taste.
Tip
You can also make a larger batch of pesto; it will keep in a sealed container in the refrigerator.
