Preparation and making the silky celeriac cream

Peel the celeriac and cut it into small cubes, approx. 1.5 cm in size. Heat 1 tablespoon of extra virgin olive oil and 10 g of butter in a pan, then add the diced celeriac and peeled, finely chopped fresh garlic. Sauté over medium heat for 5-6 minutes until a golden-brown crust forms on them.

Pour approx. 1.5 dl of water or stock under the celeriac, cover, and simmer for 8-10 minutes until the celeriac is completely tender. Then transfer it to a food processor or blender along with half of the picked fresh thyme leaves, a pinch of salt and pepper, and blend until completely silky and smooth.

Meanwhile, toast the walnuts in a dry pan without any fat for 2-3 minutes until fragrant, then transfer to a cutting board and roughly chop them.

Chef's tip

The starchy pasta cooking water is a true treasure in Italian cuisine: when added to the celeriac purée and cold butter, it acts as a natural binder, allowing the sauce to cling perfectly to the pasta.

Pan-frying the celeriac is a key step: caramelisation brings out the vegetable's deep, sweet, nutty notes, which create a perfect contrast with the salty Parmesan.
