Assembling the dough and filling
In a bowl, mix together the plain wheat flour, salt, and baking powder. Add the sour cream, then knead into a smooth, elastic dough. If it feels too dry, add 1-2 tablespoons of water. Divide the dough into 4 equal parts and shape them into balls.
Grate the Trappist cheese and smoked cheese, then mix them together in a bowl so the mild and intense smoky flavors blend perfectly.
Roll out a dough ball into a circle (approx. 15 cm in diameter). Place one quarter of the grated cheese mixture in the center of the dough, fold the edges over like a pouch, pinch tightly to seal, then gently flatten it again with your palm or rolling pin to about 1 cm thickness.
Chef's tip
Cook the flatbreads in a dry, fat-free skillet, just like traditional naan bread or piadina – this way the outside stays wonderfully crispy while the inside remains soft.
You can also add a pinch of fresh dill or finely chopped spring onion to the cheese filling for an extra Hungarian flavor touch.
