One hour before starting to bake, take all ingredients out of the refrigerator so they reach room temperature, which will help the dough rise more easily.
Sift the flour into a large bowl and make a well in the center. Pour in the lukewarm milk (it should not be hot, maximum 40 °C), add a teaspoon of sugar, and crumble in the fresh yeast. Mix with a little flour from the sides to form a thicker paste in the center, then cover and let it proof for 15 minutes.
While the yeast is proofing, clean the carrots and grate them finely. The moisture from the carrots will ensure the special softness of the buns.
Chef's tip
Gently flatten the buns before baking so they don't get too tall, making them easier to use for burgers.
