Készítsen otthon illatos, ropogós héjú kovászos kenyeret, amelyet a friss medvehagyma tesz igazán különlegessé. Ez a recept a tavasz legjavát hozza el a konyhájába: a lágy belső és a karakteres fűszernövény tökéletes párosítása minden falatban érződik. Ideális választás húsvéti reggelikhez vagy egy tartalmas leves mellé.
Preparation method
Mix the sourdough starter with the lukewarm water, then add the sifted flours and salt. Knead into a smooth, elastic dough that is only slightly sticky.
Place the finished dough in a bowl, sprinkle with a little flour, cover with a kitchen towel, and let it rise in a warm place for 2.5 hours. Fold the dough in half every 50 minutes to aerate it.
Cut the wild garlic into smaller pieces. Turn the risen dough onto a floured surface, roll it out into a flatbread shape, sprinkle with the wild garlic, then roll it up like a Swiss roll. Fold the edges up and place the loaf into a thoroughly floured proofing basket. Cover and let it rise in a warm place for about 2 hours until doubled in size. (You can also place it in the fridge overnight in a plastic bag.)
Chef's tip
You can also bake the bread on a baking stone in a similar way as in the pot, but make sure to provide adequate steam during the first minutes of baking for a crispy crust.
