
Homemade Fried Onion Bread

Preparation method
Roughly chop the red onion. In a pan, over medium heat, fry it in pork lard until golden brown, stirring frequently. Transfer the fried onion to a paper towel to absorb excess fat. We will need a total of 250 g of fried onion for the bread.
Pour 700 ml of lukewarm water (approx. 30 °C) into a bowl, then add all other ingredients (flours, yeast, vinegar, caraway, and salt). Mix them, then knead the dough with a kitchen robot for approx. 10 minutes. Add the fried onion one minute before the end of kneading.
Transfer the smoothly kneaded dough to a lightly floured surface, sprinkle with a little flour, cover with a clean kitchen towel or foil, and let it rest for 30 minutes.
Chef's tip
The bread is perfectly baked when it gives a hollow sound when tapped on the bottom.
