PREPARING THE STARTER (12-15 HOURS IN ADVANCE)
For the starter, crumble 10 g of yeast into 30 ml of lukewarm water and mix until smooth.
Sift 350 g of flour into the bowl of a food processor, then gradually add the yeast mixture and an additional 150 ml of lukewarm water while mixing on medium speed. Knead the dough for about 5 minutes until it is smooth and elastic.
Grease a bowl with 20 ml of olive oil, place the dough in it, and cover with cling film. Let it rise in a warm place for 12–15 hours, or even overnight.
