Preparation method
In a large bowl, mix the flour, instant yeast, and salt. Pour in the lukewarm water and combine with a wooden spoon or your hands until you get a sticky but homogeneous dough. No kneading required!
Cover the bowl with a clean kitchen towel or cling film and let it rise at room temperature for 2–2.5 hours, until the dough doubles in size.
About 30 minutes before the end of the rising time, preheat the oven to 230 °C. At the same time, place a lidded Pyrex dish or cast iron pot (approx. 15x20 cm) into the oven to heat thoroughly.
Chef's tip
You can also let the dough rise in the refrigerator overnight (8–12 hours). In this case, remove it from the fridge and immediately shape and bake it in the hot pot.
