Preparation method
In a bowl, mix 200 ml of lukewarm milk with the sugar and crumbled yeast, then add the remaining milk and soft butter.
Sift the flour and salt into the bowl of a stand mixer, mix them, then make a well in the center. Pour in the yeast mixture, and using a dough hook, knead the dough on medium speed for about 10 minutes until it is smooth and elastic. Cover with a clean kitchen towel and let it rise in a warm place for 60 minutes, or until doubled in size.
Dust the work surface with fine flour and turn out the risen dough. Roll it out to 1.5 cm thickness, and cut out 9 rounds with a floured cutter.
Chef's tip
For cutting, you will need a round cutter about 8 cm in diameter.
It is enough to lightly grease the pan with oil; it is not necessary to cook in abundant fat.
When serving, do not cut it in half with a knife, but prick it around with a fork and pull it apart – this way its characteristic porous structure, which perfectly absorbs melted butter, will remain!
