In a bowl, mix the cottage cheese, psyllium husk, eggs, seeds, baking powder, salt, and half of the spice blend and crushed garlic. Let the mixture rest for a few minutes.
If you have a baguette baking mold, fill it with the dough. If not, form small baguettes on a baking sheet lined with parchment paper. Make two small incisions on top of each baguette with a knife.
Mix the remaining crushed garlic with the remaining Provence spice, then spread it over the top of the baguettes at the incisions.
