Preparation method
In a bowl, mix the cottage cheese with the flour, sesame seeds, psyllium husk, baking powder, Provence herb mix, and salt. Work thoroughly until you get a uniform dough.
Place the dough in the refrigerator to rest for about 20 minutes. This helps the psyllium husk swell and the dough come together.
After resting, shape 6 equally sized buns. Tip: Before shaping, wet your hands with water so the dough doesn't stick to your palms.
Chef's tip
The buns can be served with fresh vegetables, cream cheese, or are excellent as a sandwich base.
