Preparation and Kneading
Pour the room temperature buttermilk into a bowl, then add all other ingredients (flours, yeast, vinegar, caraway, salt).
Mix, then knead the dough with a kitchen robot for about 10 minutes until smooth and elastic. Transfer the kneaded dough to a floured surface, lightly sprinkle with flour, cover with a kitchen towel or foil, and let it rest for 45 minutes.
Shaping and Proofing
Preheat the oven to 250 °C. Lightly flour a baking tray.
Chef's tip
You can steam the oven by spraying water onto the oven walls with a spray bottle after preheating until a cloud of steam forms. Then immediately place the baking tray inside.
Instead of fine wheat flour, you can also use special bread flour for an even better texture.
