Wash and peel the potatoes thoroughly, then cut them into large wedges or slices. Parboil in lightly salted boiling water for 7-8 minutes, then drain thoroughly and let the steam evaporate slightly.
Cut the yellow onions and red onions into thick wedges, and finely crush or thinly slice the garlic cloves.
Assembly and baking
Melt the lard in a baking tray. Add the parboiled potatoes, the sliced yellow and red onions, the crushed garlic, and the crispy pork cracklings.

The secret to perfectly crispy baked potatoes is parboiling and drying them thoroughly after draining: this gives the surface of the potatoes a rustic texture and allows them to absorb the seasoned lard.
