Klasszikus magyar csikós sertéstokány omlós lapockából, füstölt szalonnával, roppanós paprikával és selymes tejfölös mártással, frissen szaggatott házi galuskával tálalva.

Slice the pork shoulder into thin, finger-thick strips (for the stew). Dice the smoked bacon finely and finely chop the onions. Core the TV paprikas and tomatoes, then slice the peppers into thin strips and dice the tomatoes. Crush the garlic.

In a large pot, render the diced bacon with the lard. Add the finely chopped onions and sauté until translucent. Add the crushed garlic, then add the sliced pork shoulder and sear over high heat until it turns white.

Remove the pot from the heat, sprinkle with the sweet paprika, salt, and ground black pepper, then stir thoroughly. Add the sliced TV peppers and diced tomatoes. Pour in a little water (approx. 100-150 ml), cover, and simmer over low heat for about 40-50 minutes until the meat becomes tender as butter.

Chef's tip

The essence of tokány is the meat sliced into strips, which gets its matchless flavor from being seared in bacon fat and simmered in its own juices.

When making the sour cream liaison, always temper the mixture so the sauce remains smooth and lump-free.
