Cut the beef sirloin into thin, bite-sized strips or small cubes. Sprinkle with a pinch of salt, ground black pepper, and ground cumin.
Cut the sliced bacon, bell peppers, and onion into strips, and finely mince or crush the garlic.
Cooking and assembly
Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Add the bacon and fry for 3-4 minutes until nicely browned and the fat is rendered.
Chef's tip
It is best served directly from the skillet to the table: guests and family members can scoop the gooey, cheesy beef alambre into warm tortillas themselves.
If you like it extra spicy, slice a little fresh or pickled jalapeño pepper alongside the vegetables during sautéing.
