Heat olive oil in a large skillet over medium heat, then fry the diced bacon until crispy. Remove the bacon from the skillet, leaving the rendered fat in the pan.
Chef's tip
If you like it spicy, sprinkle a little chopped jalapeño pepper onto the browning meat or drizzle with your favorite Mexican salsa when serving!
Traditional Mexican alambre can be made with Oaxaca cheese, but gouda, cheddar, or mozzarella will also give you a perfectly stretchy, creamy result.
