Preparation method

Preparation and boiling the eggs

Place 4 eggs in a small saucepan with cold water. Boil them until hard-boiled for 9–10 minutes from boiling point, then cool them immediately in cold water and peel them.

Tear the bread roll into smaller pieces and pour 100 ml of lukewarm milk over it from the measured milk so that it softens completely. Sauté the finely chopped onion in a pan with 1 tablespoon of lard until translucent, then add the crushed garlic at the end, remove from heat, and let cool slightly.

Mixing and shaping the meat mixture

In a spacious mixing bowl, place the minced beef, the squeezed soaked bread roll, the sautéed onion and garlic, and crack in the remaining 1 raw egg. Season with sweet paprika, ground caraway, ground black pepper, 1 teaspoon of salt, and 1 tablespoon of breadcrumbs. Knead the mixture thoroughly until homogenous and easy to shape.

Chef's tip

Slicing tip: Always slice the lukewarm meatloaf with a sharp, long-bladed knife, so the egg yolks and meat texture look beautiful on the plate without crumbling.
