Cut the pork shoulder and smoked bacon into thin strips suitable for tokány (approx. 1x4 cm pieces). Finely chop the onion and garlic, clean and slice the cremini mushrooms. Dice the TV pepper and tomato.
Cooking
In a deep pot, render the bacon strips together with the lard. Add the finely chopped onion and sauté over medium heat until translucent. Add the crushed garlic, pepper, and tomato, then stir and cook for 1–2 minutes.
Remove the pot from the heat, sprinkle with sweet ground paprika, stir quickly, and immediately add the stripped pork. Return to the heat and sear over high heat until browned and the meat releases its juices. Season with salt and pepper to taste.
Chef's tip
Tempering: Always add 1–2 ladles of hot juice to the sour cream mixture before pouring it into the pot so it does not curdle, giving you a perfectly smooth, creamy sauce.
Mushroom selection: Cremini mushrooms lend a more intense, wild mushroom flavor to the dish, but feel free to supplement them with a wild mushroom mix.
