Preparation and making the couscous
Preheat the oven to 200 °C (180 °C for fan ovens).
Place 150 g couscous in a heatproof bowl, stir in 1 pinch of fine salt, then pour over 180 ml hot water. Cover with a plate and let stand for 5-7 minutes until the couscous absorbs the liquid, then fluff with a fork.
Assembling the Mediterranean filling
In a dry pan, toast 30 g pine nuts over medium heat for 2-3 minutes until fragrant and golden brown, then set aside to cool.
Chef's tip
Tip: If you want to make it even heartier, you can mix a few chopped kalamata olives or a little grated lemon zest into the filling for an even fresher Mediterranean flavor.
