Preparation and seasoning
In a small bowl, mix together the spice rub ingredients: brown sugar, smoked paprika, garlic granules, salt, and ground black pepper.
Pat the turkey thigh dry with paper towels, then rub thinly with vegetable oil. Evenly distribute the dry spice rub all over, pressing it firmly on all sides to form a delicious spice crust. Let sit at room temperature for 20-30 minutes.
Searing and grilling
Prepare your grill for indirect cooking at 130–150 °C. If using a charcoal grill or smoker, toss a handful of applewood or beechwood wood chips onto the embers for a genuine smoky flavor.
Chef's tip
If you do not have a outdoor grill with a lid, you can also prepare the recipe in the oven: bake at 150 °C fan-forced placed on a rack, with a baking tray underneath to catch the drippings.
You can even apply the dry spice rub to the meat the night before and marinate in the refrigerator overnight, allowing the flavors to penetrate even deeper into the meat.
