Preparation method
Preparation and sautéing the base
Finely chop the onion and garlic, and grate the fresh ginger. Trim both ends of the green beans, then cut them into 3-4 cm pieces. Thoroughly rinse the red lentils in cold water and drain.
Heat the coconut oil in a deep pan or pot, add the onion, and sauté over medium heat for 3-4 minutes until translucent. Then add the grated ginger and chopped garlic, and sauté for another 1 minute until fragrant.
Cooking and simmering
Add the spices: garam masala, ground turmeric, and ground cumin. Toast them over low heat, stirring constantly, for 30 seconds to release their aroma.
Chef's tip
If you like it extra spicy, you can sauté a finely chopped fresh chili pepper along with the onion in the curry base.
Instead of fresh green beans, you can also use frozen green beans; add them directly to the hot curry without thawing during the last 8-10 minutes of cooking.
