Prepare the chicken for spatchcocking: place the chicken breast-side down on a cutting board. Using sharp poultry shears, cut along both sides of the backbone, then remove it.
Turn the chicken over so the breast is facing up. Press down firmly on the breastbone with the palm of your hand until you hear a crack and the chicken lies completely flat.
Mix the dry rub: in a small bowl, combine the olive oil, smoked paprika, granulated garlic, salt, and ground black pepper. Thoroughly rub all parts of the chicken with it, both under the skin and on the outside.
Chef's tip
The secret to the spatchcock technique is even heat distribution: a flattened whole chicken cooks much faster and more evenly, the skin stays crispy all over, and the meat remains juicy.
Brush the BBQ glaze on the meat only during the last 10–15 minutes so the brown sugar and sauce do not burn over the coals, but instead caramelize beautifully.
