Thoroughly mix the yeast, sugar, and olive oil in 500 ml of lukewarm water. Measure the flour into the bowl of a kitchen robot, pour in the yeast mixture, and start kneading slowly with the dough hook. Once the flour has absorbed the liquid, add the salt.
Knead the dough on medium speed for 10 minutes, then transfer it to a floured surface. Form it into a ball and brush it with a teaspoon of olive oil to prevent it from drying out. Let it rest for 10 minutes.
Divide the rested dough into 6 equal portions and form them into tight balls. Place them on a baking tray, cover with cling film, and let them rise for 1 hour, or until they double in size. Then, place them in the refrigerator and let them mature until the next day. Take the balls out of the refrigerator 1 hour before use.
