Wash the currants thoroughly, then mash them or extract their juice with a juicer. The goal is to obtain approximately 1 kg of pure currant juice.

Pour the extracted juice into a saucepan, add the granulated sugar, and mix thoroughly. Bring the mixture to a boil.

Reduce the heat to below medium, and cook the jam for about 10 minutes, stirring occasionally.
Chef's tip
Unopened jam will keep for at least one year in a cool place. After opening, store in the refrigerator!
