Preparation method
Chop the red onion very finely. Peel the garlic, cut it in half, remove the green germ, then grate it finely or press it through a garlic press. Also finely chop the chili pepper.
Cut the tomatoes into quarters and remove the hard core along with the seeds. Dice the tomato flesh into small cubes.
In a bowl, mix the onion with the vinegar, lemon juice, and garlic. Add the diced tomatoes, finely chopped herbs (parsley, basil, thyme), and olive oil.
Chef's tip
For best results, use ripe, fleshy tomatoes. If you want an even more intense flavor, let it rest in the refrigerator for 30 minutes before serving.
