- 1 tbsp Dijon mustard
- 2 tbsp balsamic vinegar
- 200 ml vegetable oil
- 1 pinch salt

Mix the mustard and vinegar, then pour into a tall, narrow container. Blend thoroughly with an immersion blender.

Slowly pour in the oil while continuously blending until you get a smooth, silky emulsion. Finally, season with salt to taste, stir, and chill in the refrigerator before serving.
Chef's tip
If you want a thicker dressing, use a little more oil, or add a teaspoon of honey for a sweet and spicy flavor.
