
Tamarillo chutney

Preparation method
Prepare one bowl with 1 liter of hot water and another with 1 liter of cold water. Gently score the skin of each tamarillo in a cross shape, then place them in the hot water. After one minute, transfer them to the cold water. After another minute, their skins will be easy to peel. Peel all the tamarillos and cut them into smaller pieces.
Peel the apple and grate it on a large-holed grater.
Roughly chop the onion and slice the garlic. Heat one tablespoon of olive oil in a saucepan, then sauté the onion and garlic until translucent.
Chef's tip
The chutney can be served with roasted meats, but it also pairs excellently with aged cheeses. Stored in the refrigerator, its flavors will meld even better.
