- 300 g cucumber
- 200 g Greek yogurt
- 1 clove garlic
- 1 tablespoon fresh dill
- 1 tablespoon lemon juice (100%)
- 3 tablespoons extra virgin olive oil
- 1 teaspoon salt
Cut the garlic clove lengthwise in half, remove the hard germ in the middle (this helps avoid an unpleasant aftertaste), then finely chop the clove.
Cut off the ends of the cucumber, then cut it lengthwise in half. Scrape out the seeds with a spoon, then coarsely grate the cucumber. Place it in a colander, salt it, mix, and let it sit for 10 minutes to release its liquid.
Thoroughly squeeze out the liquid from the drained cucumber, then in a bowl, mix it with the Greek yogurt, garlic, chopped dill, lemon juice, and olive oil. Refrigerate for at least 2 hours before serving to allow the flavors to meld. Stir again before serving.
