- 100 g wild garlic
- 50 g grated Parmesan cheese
- 50 g toasted pine nuts
- 100 ml olive oil
- 1 tablespoon lemon juice
- 1 pinch black pepper
- 1 pinch salt
Wash the wild garlic thoroughly, then dry it. Place it in a food processor or blender and blend it.
Add the grated Parmesan and pine nuts (which you can toast in a dry pan until golden brown beforehand for a deeper flavor). While continuously mixing, pour in the olive oil until you reach the desired consistency.
Finally, season with salt, freshly ground pepper, and a little lemon juice. Mix thoroughly and serve immediately, or place in a clean jar and store in the refrigerator.
Chef's tip
Pour a thin layer of olive oil on top of the pesto in the jar; this way, it will last longer in the refrigerator without turning brown.
